Thanks to Ramuntxo and Olivier,
who have been running this
restaurant for ten years, Olatua is
a great showcase for the Basque
producers. With their team, they
perpetuate an authentic high level
cooking, with enough creativity to
surprise customers. Here you have
to try the duck breast grilled on its
bones, or the chocolate soufflé,
and might well be tempted by a
wild bass, or even a mushroom
risotto with Basque squids. This is a
place that can’t be ignored.
